Southern Style Black Eyed Peas
- 1 sweet onion chopped
- 2 garlic cloves chopped
- 1 red bell pepper chopped
- 1/2 green bell pepper chopped
- 1 tablespoon olive oil
- 1/2 teaspoon bacon salt yes, it's vegetarian!!
- 1/2 teaspoon liquid smoke
- 1/4 teaspoon dried thyme
- 16 ounces black eyed peas cans, drained and rinsed
- 16 ounces diced tomatoes
- 1 cup vegetable broth
- 1/4 teaspoon salt
- 1 tablespoon brown sugar
- In a heavy-bottomed pot, heat olive oil.
- Add garlic and onion and cook until beginning to soften, about 5 minutes.
- Add bacon salt and cook for another 5 minutes.
- Add red and green bell pepper, thyme, and liquid smoke. Cook for another 5-10 minutes.
- Add black eyed peas, tomatoes, vegetable broth, and salt. Bring to a boil, then reduce heat and simmer for at least 30 minutes.
- Add brown sugar and stir to incorporate.
