Moo Goo Gai - Pan

  1. Cook beans for 2 minutes in boiling chicken broth.
  2. Heat oils in large skillet, add chicken, mushrooms, scallions, celery, salt and pepper.
  3. Cook 7 to 8 minutes, stirring until chicken is done.
  4. Add nuts.
  5. Cook for 1 minute longer.
  6. Combine meat mixture and broth with beans.
  7. Stir well.
  8. Blend cornstarch and water.
  9. Add to mixture.
  10. Stir until thickened.
  11. Serve hot over cooked rice.
  12. Yield: 4 servings.
