Moo Goo Gai - Pan
- 1 cup fresh green beans cut into 1 inch pieces
- 1 cup fresh mushrooms sliced
- 1 cup chicken broth
- 1 tablespoon cooking oil
- 1 tablespoon oil sesame seed
- 2 chicken breasts cut into 1 inch pieces
- 2 scallions chopped, green onions
- 2 stalks celery diced
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1/2 cup cashew nuts
- 1 tablespoon cornstarch
- 1 tablespoon water
- Cook beans for 2 minutes in boiling chicken broth.
- Heat oils in large skillet, add chicken, mushrooms, scallions, celery, salt and pepper.
- Cook 7 to 8 minutes, stirring until chicken is done.
- Add nuts.
- Cook for 1 minute longer.
- Combine meat mixture and broth with beans.
- Stir well.
- Blend cornstarch and water.
- Add to mixture.
- Stir until thickened.
- Serve hot over cooked rice.
- Yield: 4 servings.
