Fruit And Cheese Pizza
- 1 (20 oz.) pkg. slice and bake sugar cookie dough (frozen)
- 1 (8 oz.) pkg. light cream cheese (room temperature)
- 1/3 c. sugar
- 1 Tbsp. brandy
- 1/2 tsp. vanilla
- 4 c. thinly sliced fruit (kiwi, strawberries and bananas)
- 1/2 c. apricot preserves
- 2 to 3 Tbsp. brandy
- Preheat oven to 375u0b0.
- Cover a 14-inch pizza pan with aluminum foil.
- Cut cookie dough into 1/8 to 1/4-inch rounds.
- Arrange in slightly overlapping pattern, covering pan completely.
- Press to seal.
- Bake until puffed and golden, about 10 minutes.
- Cool completely.
- (This can be done 8 hours ahead of time.)
- Combine the cream cheese, sugar, brandy and vanilla in bowl; spread evenly over crust.
- Arrange fruit slices in circular pattern over filling.
- Start with strawberries, then kiwi, then bananas, repeating until completely filled.
- Melt apricot preserves with the brandy in small saucepan over low heat; brush over fruit. Cover; chill for 1 hour before serving.
