Chicken Taquitos

  1. In a skillet, melt butter and add onions, and green peppers and cook for 10 minutes.
  2. Add shredded chicken and mix thoroughly.
  3. Remove mixture to a large bowl to let cool slightly, then add shredded cheese and mix.
  4. In a high-edged fry pan fill about half full with vegetable oil and turn heat to medium.
  5. Lay a tortilla on a flat surface and on the edge closest to you, spoon a strip of filling (as much as you'd like, but don't over-stuff so you can still easily roll it tight) in a line, then tightly roll the tortilla up and pierce all the way through with a toothpick.
  6. Re-peat until you make the desired amount of taquitos that you want.
