Chicken Taquitos
- 5 pounds rotisserie chicken shredded
- 1 cup diced onions
- 1 cup green peppers Diced
- 8 ounces extra sharp cheddar cheese shredded
- 2 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon pepper
- flour tortillas medium, sized
- vegetable oil
- In a skillet, melt butter and add onions, and green peppers and cook for 10 minutes.
- Add shredded chicken and mix thoroughly.
- Remove mixture to a large bowl to let cool slightly, then add shredded cheese and mix.
- In a high-edged fry pan fill about half full with vegetable oil and turn heat to medium.
- Lay a tortilla on a flat surface and on the edge closest to you, spoon a strip of filling (as much as you'd like, but don't over-stuff so you can still easily roll it tight) in a line, then tightly roll the tortilla up and pierce all the way through with a toothpick.
- Re-peat until you make the desired amount of taquitos that you want.
