Easy Chicken Breasts Ala Orange
- 3 large chicken breasts, split, skinned and boned
- 10 Tbsp. unsalted butter
- 2 Tbsp. all-purpose flour
- 1/4 tsp. dry mustard
- 1/4 tsp. cinnamon
- 2 Tbsp. sugar
- 1 1/4 tsp. ground ginger
- 1 1/2 c. orange juice
- hot cooked rice
- salt
- Sprinkle chicken breasts with salt.
- Brown in butter in large skillet.
- Remove breasts from skillet and add flour, spices and sugar to drippings.
- Stir to a smooth paste.
- Gradually add orange juice.
- Bring to a boil, stirring constantly until mixture is thick and smooth.
- Reduce heat and add chicken.
- Cover and simmer until chicken is tender, 30 to 45 minutes.
- Remove chicken to serving plate and garnish with orange slices and parsley.
- Serve with hot rice.
- Serve extra sauce separately.
- Serves 6.
