Cinnamon Bread Pudding
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 3 1/2 ounces dried mixed fruit
- 8 slices bread
- 2 tablespoons butter
- 2 1/2 cups skim milk
- 2 eggs
- 1 tablespoon honey warmed
- heavy cream to serve, optional
- Preheat oven to 350u0b0F. Grease a large pie dish. Place inside of a roasting pan.
- Combine sugar, cinnamon and dried fruit. Spread butter over bread. Layer bread slices in prepared dish, butter-side up, sprinkling with fruit mixture between layers. Whisk together milk and eggs then pour over bread. Set aside for 30 mins.
- Add enough hot water to roasting pan to come halfway up sides of pie dish. Bake for 30-40 mins, until golden brown and set in the center. Brush warmed honey over pudding. Serve with heavy cream, if desired.
