Cannolis

  1. Place the flour, sugar, cocoa, cinnamon, and salt into the mixer. Mix together and add the oil and vinegar. Add the cranberry juice little by little. Mix to form a soft dough.
  2. Separate a section of dough and refrigerate the rest. Roll out the section, it should be very thin. Cut into circles and set aside.
  3. Roll each circle into an oval and wrap around a funnel to form a cone. Dab egg white where the dough meets to seal together.
  4. Heat the oil to 180 Celsius and fry the cones, preferably one at a time, until golden. Drain well. Allow to cool.
  5. Fill as desired. Repeat with the chilled dough.
