Banana Peach Jam

  1. In large saucepan, combine bananas, peaches, chopped cherries and lemon juice.
  2. Stir in pectin crystals.
  3. Bring to a boil over high heat, stirring constantly until mixture comes to hard boil.
  4. At once, stir in sugar.
  5. Bring to full rolling boil; boil hard for 1 minute, stirring constantly.
  6. Remove from heat; skim off foam with metal spoon.
  7. Stir and skim for 5 minutes to prevent floating fruit.
  8. Pour into hot sterilized jars leaving 1/4 inch head space.
  9. Cover while hot with sterilized two piece meal lids with new centers.
  10. Cool completely and then check to make sure lids have sealed.
