Healthy Banana Bread
- 1 1/4 cups oat flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon powder
- 1/4 teaspoon nutmeg
- 1/4 teaspoon sea salt
- 3 bananas medium sized ripe, / 1cup mashed
- 6 dates soft, pitted and diced
- 3 whole eggs
- 1/4 cup pure maple syrup or 1/2 cup if you have a sweeter tooth
- 1/4 cup coconut oil / Olive oil
- 1/4 cup cacao nibs or Raisins, this is optional you can leave them out or use other seeds and nuts
- Preheat your oven to 180C / 350F
- Mix all dry ingredients together in a medium bowl and set aside
- Mash 3 ripe Bananas in a large mixing bowl
- Dice Dates and discard its seeds
- Add all the wet ingredients to the mashed Bananas in the large mixing bowl
- Mix well until combined
- Add the dry ingredient to the wet 1/3 at a time
- Mix until dry and wet ingredients are well combined
- Lightly oil a loaf pan or a round dish like the one I used in the picture, Lightly oil your loaf pan/round dish with some coconut oil
- Place a piece of Parchment paper at the bottom of your loaf pan
- Pour mixture into loaf pan and bake for 60 minutes
