Bayou Blend (Seafood Casserole)
- 2 c. medium cooked shrimp
- 1 lb. crab meat, shell removed
- 1 stick oleo
- 1 small onion, chopped
- 1/2 bell pepper, chopped
- 3 ribs celery, chopped
- 1 clove garlic, pressed
- 2 c. cooked rice
- 2 cans mushroom soup
- 12 oz. grated sharp Cheddar cheese
- Ritz crackers
- Saute onion, bell pepper,
- celery and garlic in 1 stick oleo. In large mixing bowl add
- 2 cups of cooked regular rice and the sauteed vegetables.
- Add mushroom soup, grated cheese, crab meat and the
- chopped
- shrimp.
- Mix
- until
- well blended. Spray a 9 x 11-inch pan
- or
- preferably
- glass
- dish with Pam. Pour in crab and shrimp
- mixture.
- Top
- with
- 20
- regular size Ritz crackers. Dot with 1 stick
- of
- oleo.
- Bake in 350u0b0 oven for 35 to 40 minutes.
- Will serve 12.
