Glazed Sweet Potatoes
- 1/2 c. brown sugar, divided
- 2/3 c. orange juice, divided
- 1/3 c. margarine, melted and divided
- 2 lb. can sweet potatoes
- 2 eggs
- 1 tsp. salt
- 1/4 tsp. cloves
- 1 tsp. cinnamon
- 1 c. pecans, chopped
- peeled orange slices
- marshmallows
- Combine 1/4 cup brown sugar, 2 teaspoons orange juice and 2 teaspoons melted margarine.
- Mix and set aside for glaze.
- Whip potatoes until smooth; beat in eggs.
- Add sugar, orange juice and melted butter.
- Add salt, cloves and cinnamon.
- Mix; pour in casserole.
- Sprinkle pecans on top.
- Pour glaze topping over pecans.
- Bake at 350u0b0 for 40 minutes.
- Top with orange slices and marshmallows.
- Put under broiler until brown.
