Shrimp With Lemon-Saffron Rice

  1. Heat 1 Tbsp. olive oil in a large pot.
  2. Add 1/2 cup each chopped onion & bell pepper, cook 3 minutes.
  3. Add 1 minced garlic clove, cook 30 seconds more.
  4. Add 1 pound peeled and deveined shrimp, cook another 30 seconds.
  5. Add 2 cups rice, 1/2 cup water, 14 ounces broth, 1 1/2 tsp. oregano, 1/4 tsp each: salt, pepper, saffron and paprika.
  6. Cover, reduce heat and summer until rice is cooked.
  7. Stir in 1 cup frozen peas and 2 1/2 Tbsp. fresh lemon juice to finish.
