Breakfast Burritos
- 3 tablespoons butter
- 5 1/2 ounces ham diced
- 6 scallions trimmed and chopped
- 4 flour tortillas soft
- 8 medium eggs room temperature
- 2 tablespoons cream
- 3 1/2 ounces cheddar grated
- 1 tablespoon parsley chopped
- 2 ounces feta cheese crumbled, optional
- 1/3 cup cilantro chopped, optional
- hot sauce such as Tabasco, to serve
- Heat 1 tbsp of butter in a small frying pan and add the ham. Cook for several minutes until browned, then add the scallions. Cook for 3-4 mins, just until the scallions start to wilt. Turn off the heat.
- Wrap the tortillas in foil and place them in the oven on low heat to warm.
- Whisk the eggs with the cream, ham and scallions and season to taste. Melt 2 tbsp of butter in a medium frying pan over low heat. Add the eggs and cook for about 7 mins, stirring occasionally. Sprinkle with cheddar and parsley.
- Remove the tortillas from the oven, spoon on the scrambled eggs and add the feta and cilantro, if using. Sprinkle with hot sauce, roll up and serve.
