Roasted Pork With Balsamic Glaze With Roasted Vegetables
- 1 pound rotisserie pork
- 12 Brussels sprouts halved
- 3 carrots peeled, cut on bias
- 2 onions medium-sized, sliced
- 1 pound fingerling potatoes halved
- 1/2 cup extra-virgin olive oil
- salt
- cracked pepper
- 2 tablespoons balsamic syrup
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- For the Pork: Thinly slice rotisserie pork
- In a mixing bowl, combine Brussels sprouts, carrots, onions and fingerling potatoes with 1/2 cup olive oil, salt and pepper. Toss to combine and coat all ingredients.
- Place on sheet tray and roast at 400u0b0F until potatoes are tender and other vegetables are evenly browned, about 40 minutes.
- For Balsamic Glaze: Mix balsamic syrup, honey and olive oil.
