Roasted Pork With Balsamic Glaze With Roasted Vegetables

  1. For the Pork: Thinly slice rotisserie pork
  2. In a mixing bowl, combine Brussels sprouts, carrots, onions and fingerling potatoes with 1/2 cup olive oil, salt and pepper. Toss to combine and coat all ingredients.
  3. Place on sheet tray and roast at 400u0b0F until potatoes are tender and other vegetables are evenly browned, about 40 minutes.
  4. For Balsamic Glaze: Mix balsamic syrup, honey and olive oil.
