Aloo Paratha

  1. Combine the potatoes and spices and mash together. Roll the mixture into 10 large balls.
  2. To make a paratha: Roll out the roti ata into a 6 inch circle. Coat the inside of the circle with ghee or oil and then place the potato ball in the middle. Pinch the sides of the circle together to enclose the potato mixture. Seal by twisting and then even out the ball in your hands. Apply enough flour on the surface and rolling pin to roll out the paratha ball with the twisted side on top.
  3. Place the paratha on high heat with the twisted side on top. Flip and apply butter generously. Serve warm with with yogurt on the side.
