Strawberry Marshmallow Delight

  1. Pour 2/3 cup of evaporated milk in a refrigerator ice tray. Place in freezer until ice crystals begin to form around the edges.
  2. In a quart saucepan, combine marshmallows and 1/2 cup evaporated milk.
  3. Cook and stir over low heat until marshmallows are just melted.
  4. Remove from heat and stir in lemon juice, lemon rind and water.
  5. Chill until slightly thicker than unbeaten egg whites.
  6. Place cold milk in quart bowl; whip with cold rotary beater or with electric mixer at high speed until stiff.
  7. Fold into marshmallow mixture.
  8. Fold in strawberries and pour into chilled pie crust.
  9. Chill until firm (about 3 hours).
