Lemon Tart

  1. Preheat oven to 200u0b0C (approximately 400u0b0F).
  2. Grind cookies in food processor, mix with cooled, melted butter until smooth and spreadable.
  3. Press cookie mixture in a thin, even layer into pie dish.
  4. Beat egg yolks with condensed milk and lemon juice.
  5. Spread on top of crust.
  6. Bake in preheated oven for about 15 minutes.
  7. Beat egg whites until foamy.
  8. Add sugar and continue to beat until glossy and smooth meringue forms.
  9. Reduce oven temperature to 180u0b0C (approximately 350u0b0F).
  10. Spread meringue on top of the pie and bake on the upper oven rack for a few minutes until golden brown.
  11. Garnish with lemon zest.
