Tiramisu
- 4 eggs yolks and whites separated
- 5/8 cup sugar divided
- 3 7/8 cups mascarpone cheese room temperature
- 7/8 pound ladyfingers
- 1 11/16 cups coffee
- cocoa powder bitter
- In a bowl, whisk together the egg yolks and 60 grams of sugar until combined. Add the mascarpone cheese and whisk until there are no lumps.
- In another bowl, whisk together the egg whites with the remaining 60 grams of sugar until the mixture comes to stiff peaks.
- Carefully fold the egg yolk mixture into the egg white mixture, trying not to lose volume.
- Set out a baking tray with a flat bottom.
- Soak the ladyfingers in coffee for a maximum of 3 seconds each and set them down in a layer in the baking tray.
- Cover the ladyfingers with a layer of the cream you made. Use a spatula to spread it out evenly.
- Sprinkle with cocoa powder.
- Repeat all layers again, finishing with a layer of cocoa powder.
