Sour Cream Potato Salad
- potatoes 7 med., cooked in jackets, peeled
- 1 cup italian salad dressing
- 3/4 cup celery chopped
- 1 cup green onions chopped
- 4 boiled eggs whites chopped
- 1 cup mayonnaise or salad dressing
- 1 cup sour cream
- 2 tablespoons horseradish mustard
- salt
- pepper
- celery seed to taste
- Wash and boil whole potatoes (skins on) until tender, approximately 1 1/2 hours. When done, remove from heat; let cool a few minutes before taking skins off. Pour dressing over warm sliced potatoes. Chill 2 hours. Add celery, onion and egg whites.
- Mash egg yolks and mix with mayonnaise, sour cream and mustard. Fold mixture into salad. Add salt, pepper and celery seed to taste. Chill 2 hours. Makes 8 servings. Pimentos and sweet pickle relish may be added.
