Crayfish And Sorrel Salad
- 1 tablespoon olive oil
- 7/8 pound crayfish or tiger prawns
- 2 cloves garlic crushed
- 1 inch ginger piece of root, grated
- 8 1/3 cups spinach bag, washed
- 2 3/4 cups sorrel
- 7/8 ounce Flora pro.activ spread
- 7/8 cup tomato juice
- 1 lime
- 1 tsp ready grated chilli
- 1/2 tablespoon mint leaves finely chopped, optional
- Heat the oil and saute the fish, garlic and root ginger for 3 to 4 minutes.
- Meanwhile place the spinach in a large saucepan with 1 to 2 tablespoons water, cover and cook for 2 to 3 minutes, shaking the pan from time to time until the spinach has wilted. Add the sorrel with the Flora pro.activ spread and stir through.
- Mix all the ingredients for the sauce in a saucepan and heat through gently.
- Serve the crayfish on a bed of spinach and sorrel, topped with the sauce.
