Cheesy Taco Skillet

  1. In a large pan, lightly brown ground beef and crumble well. Drain excess fat.
  2. Add onions and peppers, and cook until browned.
  3. Add canned tomatoes, taco seasoning, and any water needed for taco seasoning to evenly coat mixture (up to 1 tbsp- the liquid from the tomatoes will help)
  4. Add greens and let fully wilt.
  5. Mix well.
  6. Cover with shredded cheese and let cheese melt. (Note: We've used as little as 1/2 cup of cheese and it still is very good!)
  7. OPTIONAL: When cheese is melted, serve over a bed of lettuce, rice, or in a taco or burrito. I personally like a big bowl of the stuff and don't think it needs anything else, plus is keeps it very low calorie!
