Potatoes Bolognese

  1. Preheat the oven to 400u0b0F. Heat 1 tbsp oil in a saucepan and cook the ground beef until browned. Add the peppers, carrots and onion and saute until softened. Stir in the tomato puree and season with salt and black pepper. Add 3/4 cup water and bring to a boil. Stir in the basil. Remove from heat, spoon into 4 ovenproof dishes and top with the potatoes. Drizzle with 1 tbsp oil.
  2. In a bowl, mix the thyme, breadcrumbs and parmesan. Sprinkle over the potatoes. Bake for 30 mins, then drizzle over the cream and bake for another 15-20 mins, until golden brown. Garnish with basil.
