Baked Chicken With Lima Beans
- 3 1/2 ounces lima beans dried, soaked overnight, drained
- 1/4 cup olive oil
- 6 chicken drumsticks
- 1 red onion chopped
- 1 stalk celery chopped
- 1 red bell pepper deseeded, chopped
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 2 bay leaves dried
- 2 sprigs fresh rosemary
- 1/2 cup white wine
- 2 tablespoons tomato paste
- 2 cups chicken stock
- 27 ounces chopped tomatoes
- mixed greens to serve
- Preheat oven to 375u0b0F.
- Place lima beans in a large saucepan, cover with water then bring to a boil. Reduce heat and simmer for 15 mins. Drain.
- Meanwhile, heat oil in a large Dutch oven over high heat. Cook chicken for 3-4 mins, until browned all over. Set aside. Add onion, celery and pepper and saute for 4-5 mins, until tender. Add herbs. Deglaze pan with wine then simmer for 2 mins, until liquid is almost evaporated. Add tomato paste then stock, tomatoes and chicken. Bring to a boil over high heat, stirring occasionally. Transfer to oven and bake for 15-20 mins. Add beans and cook for another 15 mins.
- Serve with mixed greens.
