Spiced Roast Beef
- 5 lb. eye roast
- 1/4 c. water
- 2 large onions, sliced
- 4 stalks celery, cut into 1/2-inch slices
- 12 oz. bottle chili sauce
- 4 cloves garlic, chopped
- 2 bay leaves
- 1/2 c. brown sugar
- 1/2 c. Dijon mustard
- 1/4 c. soy sauce
- 1/4 c. red wine vinegar
- 3 Tbsp. molasses
- 1 can beer
- Place eye roast in large ovenproof plastic baking bag.
- Place bag in a shallow roasting pan, large enough to hold it comfortably.
- Mix all of the other ingredients together and pour over roast beef.
- Seal the bag and puncture the top in several places with a knife.
- Bake at 325u0b0 for 3 hours. Remove from oven and let meat cool slightly.
- Cut open the bag and remove meat. Pour sauce in a bowl, discarding the bay leaves. Sauce is great served over the meat.
