Bengali Spicy Chicken

  1. Fry the onions in the oil medium heat until soft but not brown, add the chopped garlic. Then add the cardamoms, bay leaves and cinnamon stick,
  2. Once brown, add the garlic paste and ginger paste. Add the chilli powder and turmeric powder. Then add a little bit water so the spices don't burn.
  3. Keep stirring until water evaporates. Add the chicken and stir until it fries a little.
  4. Add 1 tsp of cumin powder. Add half cup water to mix the cumin with the chicken.
  5. Keep stirring for 5 more minutes then add the rest of the cumin powder.
  6. Add salt and stir well. Then simmer until oil separates, about 15 minutes.
  7. Add 2 cups water.
  8. Put on the lid and cook for about 30 minutes, stirring occasionally.
  9. Add a bit more salt to taste. Add the whole green chilis.
  10. Serve hot with rice or naan bread!
