Tomale Pie
- 4 Roma tomatoes or 8 oz can chopped tomatoes
- 1 vidalia onion small, chopped
- 3 cloves garlic chopped
- 1 1/2 pounds ground beef I use 80/20
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon ground pepper fresh
- 4 ounces tomato sauce Hunt's
- 6 ounces salsa I used Pace mild
- 14 ounces kidney beans undrained
- 2 tablespoons green chili peppers canned
- 1 1/4 ounces taco seasoning
- 1 tablespoon cumin seed
- 1 tablespoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon paprika
- 8 ounces corn muffin mix
- 4 ounces corn or creamed corn
- 2 cups shredded cheddar cheese or mexican blend
- 1/4 cup green onion sliced
- 2 tablespoons flat leaf parsley chopped, or cilantro if you like that stuff
- 1 egg
- In a small boiling pot of water, submerge tomato for one minute, then plunge tomato into cold water bath then remove skin with back of knife. Repeat with other tomatoes, one at a time, changing the cold water after each tomato. Dice and reserve with its juices in small bowl.nhop onion and reserve. Chop garlic and reserve.
- In a large oven proof skillet, add olive oil. Wait one minute and add onion. Saute until soft but not brown. Add ground beef, salt, pepper and cook over medium-high heat until no pink remains; drain most of liquid. Return to heat and add garlic and saute until fragrant (2 minutes).ntir in tomato sauce, salsa, undrained beans, tomatoes, chilies and taco seasoning mix and remaining spices. Bring to a low boil; reduce heat, cover and simmer 7-9 minutes.nreheat oven to 375 degrees.
- Prepare corn muffin mix according to package directions. Add corn to mix**. Drop small spoonfuls of muffin batter over meat mixture to form uniform layer. nover and cook over medium-low heat 15-17 minutes or until corn bread is done.nenerously top with cheese. Add parsley (or cilantro) and green onion. Finish cooking in oven uncovered for 5 minutes or cover and cook over low heat until cheese melts.
- Let rest 5 minutes. Cut into pie slices and serve. Enjoy!
