Vegetarian Southwestern Lime Chili

  1. Dice Avocado and chop Green Onions, set aside.
  2. Chop Cilantro, set aside.
  3. Combine Diced Tomatoes, Black Beans, Corn, and Green Chilies in a medium saucepan or small stock pot. Heat to medium, stirring frequently.
  4. Reduce chili to desired thickness. Add Salt and Pepper to taste.
  5. Add Cilantro and spices, stir. Cook for 1-2 more minutes on low. Add additional spices to taste.
  6. Serve with a dollop of Sour Cream, Diced Avocados, and Fried Onions. Garnish with Lime Wedges.
  7. Enjoy!
