Vegetarian Southwestern Lime Chili
- 1 Avocado, diced (optional)
- 2 Cans Low Sodium Diced Tomatoes
- 2 Cans Low Sodium Whole Kernel Corn
- 2 Cans Low Sodium Black Beans
- 2 Cans Diced Green Chiles
- 4 Tbsp Low Fat Sour Cream (optional)
- 4 Tbsp French's French Fried Onions
- 2 Green Onions
- 2 Tbsp
- 1 Lime (optional)
- 2 Tbsp Cilantro
- 1/2 Tsp Ground Cumin
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Chili Powder
- Dice Avocado and chop Green Onions, set aside.
- Chop Cilantro, set aside.
- Combine Diced Tomatoes, Black Beans, Corn, and Green Chilies in a medium saucepan or small stock pot. Heat to medium, stirring frequently.
- Reduce chili to desired thickness. Add Salt and Pepper to taste.
- Add Cilantro and spices, stir. Cook for 1-2 more minutes on low. Add additional spices to taste.
- Serve with a dollop of Sour Cream, Diced Avocados, and Fried Onions. Garnish with Lime Wedges.
