Wild Rice With Carrots & Kale

  1. Bring 1 +1/4 cups water to a boil in a small saucepan; stir in rice, thyme, salt, & pepper. Cover, reduce heat, and simmer for 45 minutes.
  2. Meanwhile, chop the vegetables and herbs.
  3. When about 5 minutes remain of rice cook time, melt butter in a non-stick skillet. Add carrots, kale, onion, and garlic; saute at medium heat 3-4 minutes until onion & garlic begin to soften.
  4. Stir in balsamic vinegar; add rice & mix well.
  5. Enjoy!
