Wild Rice With Carrots & Kale
- 1/2 cup wild rice
- 1 teaspoon fresh thyme leaves
- 2/3 cup sliced carrots ~1/4" thick
- 1 cup kale chopped, ~1" square pieces
- 1 tablespoon butter
- 1 tablespoon red onion minced
- 1 clove garlic sliced thinly
- 1 tablespoon fresh basil chopped
- 1 teaspoon fresh dill chopped
- 1 tablespoon fresh parsley chopped
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon salt
- freshly ground black pepper to taste
- Bring 1 +1/4 cups water to a boil in a small saucepan; stir in rice, thyme, salt, & pepper. Cover, reduce heat, and simmer for 45 minutes.
- Meanwhile, chop the vegetables and herbs.
- When about 5 minutes remain of rice cook time, melt butter in a non-stick skillet. Add carrots, kale, onion, and garlic; saute at medium heat 3-4 minutes until onion & garlic begin to soften.
- Stir in balsamic vinegar; add rice & mix well.
