Bean And Rice Salad

  1. Saute the onion in the olive oil until it begins to brown, add one tomato, rice, and beans. Season with the chile powder and oregano. Cook for 3 minutes, to heat through. Remove from heat.
  2. Mix the other tomato, cilantro, tomato sauce, salt, and pepper together in a separate bowl.
  3. Place the lettuce into a salad bowl along with the rice and bean mixture. Stir in the tomato mixture and serve topped with cheese, tortilla chips, salsa, and lime juice.
