Tropical Fruit Cocktail
- 1/2 c. fresh orange juice
- 1/4 c. fresh lime juice
- 2 Tbsp. sugar
- 1 Tbsp. peeled, grated ginger root
- 1 small red jalapeno pepper, seeded and cut into 1/2-inch thick chunks or slices
- 1 small ripe pineapple, peeled, cored and cut into 1/2-inch thick chunks
- 1 ripe yet firm banana, cut into 1/2-inch thick chunks
- 1/4 c. grated fresh coconut or flaked pkg. coconut (raw or toasted)
- mint leaves (optional garnish)
- In small bowl, combine juices, sugar, ginger root and jalapeno; stir to mix and partially dissolve sugar.
- Set aside. In large bowl combine remaining ingredients.
- Stir juice mixture again to blend.
- Drizzle over fruit and stir to coat.
- If time permits, marinate at least 1 hour in refrigerator before serving. Garnish with mint leaves.
- Makes 6 servings.
