Easy No Boil Noodle Lasagna

  1. Defrost spinach in the microwave and squeeze out any water. Set aside.
  2. In a small bowl, mix together ricotta, egg and parmesan*. nSet aside a small amount of parmesan to sprinkle on the top of the lasagna.
  3. Heat olive oil in a large pot over medium-high heat. Add onions and sautee until translucent. Add in ground sausage and ground beef. Cook until browned. Add minced garlic and stir until fragrant.
  4. Lower heat to medium and add spaghetti sauce, diced tomatoes, water, oregano, basil, parsley, salt, pepper, and a pinch of sugar. Stir and heat until boiling. Turn heat off. Set aside.
  5. Spray a 9" x 13" pan with cooking oil. Add enough meat sauce to cover the bottom of the pan. Lay dry lasagna noodles onto the sauce.
  6. Spread the ricotta mixture over the dry noodles. Sprinkle spinach over the ricotta. Next, cover with meat sauce and sprinkle mozarella and blended cheese over the sauce. Repeat these layers three more times.
  7. The last layer will be topped with dried noodles. Pour as much of the lasagna sauce over them to ensure the noodles are completely covered. Sprinkle any remaining cheese over the top. Cover loosely with foil. Bake in a 350F degree oven for 1 hour.
