Grandmother’S Almond Cake

  1. Preheat the oven to 180C.
  2. Beat the 10 egg yolks with 200 grams of sugar, then add the ground almonds, the breadcrumbs, a pinch of ground clove, and the rum.
  3. Beat the egg whites, incorporating the remaining sugar by adding it gradually, until beaten to very stiff peaks.
  4. Fold the egg whites into the batter carefully.
  5. Place the batter in a buttered and floured springform pan, add the almonds on the top and bake for approximately 1 hour, or until a toothpick inserted in the center comes out clean.
  6. Remove the cake from the oven, let it cool, and sprinkle it with powdered sugar before serving.
