Grandmother’S Almond Cake
- 8 eggs + 2 egg yolks
- 1 3/8 cups sugar
- 2 9/16 cups ground almonds
- 3 ounces white wine
- 2/3 cup breadcrumbs
- ground clove
- 1 teaspoon rum
- 11/16 cup almonds coarsely chopped
- Preheat the oven to 180C.
- Beat the 10 egg yolks with 200 grams of sugar, then add the ground almonds, the breadcrumbs, a pinch of ground clove, and the rum.
- Beat the egg whites, incorporating the remaining sugar by adding it gradually, until beaten to very stiff peaks.
- Fold the egg whites into the batter carefully.
- Place the batter in a buttered and floured springform pan, add the almonds on the top and bake for approximately 1 hour, or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven, let it cool, and sprinkle it with powdered sugar before serving.
