Grilled Chicken With Pepper Sauce
- 4 chicken breast fillets
- 1 tablespoon butter melted, 1/2oz
- 2 chillies Fresh, seeds removed
- 2 red peppers cored and chopped
- 1 3/8 cups sundried tomatoes
- 2 teaspoons light brown sugar Soft
- 1 tablespoon white wine vinegar
- 1 1/2 cups chopped tomatoes
- salt
- freshly ground black pepper
- 1 tablespoon chopped parsley Freshly
- 1. Brush the chicken breasts with melted butter and place under a preheated moderate grill for approximately 15 minutes turning occasionally.
- 2. Meanwhile, place the remaining ingredients in a food processor or blender and blend until smooth. Transfer to a saucepan.
- 3. Simmer the sauce for 3-4 minutes then pour over the cooked chicken breasts, and sprinkle with parsley.
