  1. Amounts and sizes of the ingredients herein depend entirely on the size duck one starts out with.
  2. A young, fat duck is rubbed inside and out with salt and pepper.
  3. Stuff with enough bread crumbs to fill the cavity, which has been moistened with a semi-dry white cooking wine or saki or Chinese rice wine.
  4. Add 4 tablespoons of blanched almonds, pureed to paste with 1 tablespoon ice water and 2 pinches of anise seed plus 1/4 teaspoon powdered ginger.
  5. Blend well. Stuff bird and sew up cavity.
