Quarkstollen
- 2 1/4 cups raisins
- 4 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 2 eggs
- 13/16 cup granulated sugar
- 1 tablespoon vanilla sugar
- 7/8 cup softened butter
- 1 cup plain yogurt
- 2/3 cup orange peel minced
- 7/8 cup chopped almonds
- 3 tablespoons rum
- confectioner's sugar for decoration
- Preheat oven to 175 u0b0C
- In a bowl pour the raisins and sprinkle with a tablespoon of flour, mix well so they are completely coated.
- Pour all ingredients in a food processor bowl, and mix at medium speed until smooth.
- On a floured surface, roll out the dough and shape into an oval loaf.
- Using the tip of a rolling pin, score a dent of 3 cm along the center of the loaf.
- Flatten one of two sides.
- Fold the thicker and narrower part on the thinner.
- Place the loaf on a baking sheet lined with parchment paper.
- Bake for 60 to 75 minutes, checking doneness with the blade of a knife.
- Let it cool and sprinkle with confectioner's sugar.
