Chicken Waldorf
- 12 baby potatoes
- 1 teaspoon whole black peppercorns
- 2 chicken breasts trimmed
- 2 green apples cored, chopped
- 1 red apple cored, chopped
- 3 stalks celery thinly sliced
- 2/3 cup walnuts chopped
- 2/3 cup low-fat yogurt
- 1/2 tablespoon lemon juice
- 12 leaves lettuce
- Place potatoes in a large saucepan. Cover with cold water then bring to a boil. Cook for 10-12 mins, or until tender. Drain. Let cool slightly then halve.
- Meanwhile, fill a large saucepan 1/3 full with water. Place over high heat. Add peppercorns and bring to a simmer. Add chicken, cover and simmer for 10-12 mins, or until chicken is just cooked. Set aside, cover loosely with foil and let rest for 5 mins. Slice.
- Combine apples, celery, walnuts and potatoes. Whisk together yogurt and lemon juice. Season. Toss with apple mixture. Arrange 2 lettuce leaves on each serving plate. Top with chicken and salad. Serve.
