- 1 teaspoon dijon mustard
- 1/4 cup low sodium soy sauce
- 1 tablespoon olive oil
- 4 chicken breasts cut into small cubes
- 6 tablespoons olive oil divided

- 1 clove garlic minced

- 3 tablespoons red wine vinegar
- 1 tablespoon dijon mustard
- 1 teaspoon honey

- Cut chicken in small pieces, about 11/2 inch cubes.

- To make the salad, use 3 tbsp of the olive oil and cook shallots and garlic over medium-low heat until soft.
- Whisk in beer, vinegar, mustard and honey.
- Reduce to low and simmer for 4-5 minutes. Remove from heat, let cool. Add salt and pepper to taste.
