Tilapia With Mushrooms, Olives And Tomatoes
- 24 ounces tilapia
- 16 ounces mushrooms
- 16 ounces green olives
- 16 ounces grapes
- 16 ounces cherry tomato
- 1 tablespoon fresh basil
- 4 teaspoons olive oil
- 1 tablespoon minced garlic
- 1 tablespoon fresh thyme

- In a large non-stick (or well sprayed) skillet over medium, heat 2 Tbsp. olive oil. Add garlic and mushrooms and saute until golden, about 8 - 10 minutes, stirring frequently. Don't let the garlic burn.
- Still over medium head, add olives tomatoes and herbs, stirring for another 2-3 minutes or until all liquid is absorbed. Remove the vegetables from the heat and keep warm.
- Season the tilapia on both sides with salt and pepper to taste. Be careful as tilapia is somewhat fragile so handle it gently. Add the remaining 2 Tbsp. olive oil and let it heat about 30 seconds.
- Place the seasoned fish in the skillet and cook about 3 minutes until the bottom is nicely browned; gently turn and cook the other side about 2-3 minutes until golden brown and the fish flakes easily. Return the vegetables to the skillet to rewarm.
- Serve the tilapia with most of the herbed vegetables around and a little over the fish itself.
