Tilapia With Mushrooms, Olives And Tomatoes

  1. In a large non-stick (or well sprayed) skillet over medium, heat 2 Tbsp. olive oil. Add garlic and mushrooms and saute until golden, about 8 - 10 minutes, stirring frequently. Don't let the garlic burn.
  2. Still over medium head, add olives tomatoes and herbs, stirring for another 2-3 minutes or until all liquid is absorbed. Remove the vegetables from the heat and keep warm.
  3. Season the tilapia on both sides with salt and pepper to taste. Be careful as tilapia is somewhat fragile so handle it gently. Add the remaining 2 Tbsp. olive oil and let it heat about 30 seconds.
  4. Place the seasoned fish in the skillet and cook about 3 minutes until the bottom is nicely browned; gently turn and cook the other side about 2-3 minutes until golden brown and the fish flakes easily. Return the vegetables to the skillet to rewarm.
  5. Serve the tilapia with most of the herbed vegetables around and a little over the fish itself.
