Tabulah - Crushed Wheat Salad
- 1 c. fine burghul wheat
- 6 fresh ripe tomatoes, peeled and finely chopped
- 2 c. cilantro parsley, finely chopped
- 2 c. onions, finely chopped
- juice of 4 lemons
- 2/3 c. olive oil
- 3 small bags radishes, finely chopped
- 4 tsp. salt
- freshly ground black pepper
- 4 Tbsp. fresh mint, finely chopped (optional)
- Cover burghul with cold water and soak 1/2 hour.
- Drain and squeeze dry in dampened cloth.
- Place in large bowl and add all ingredients except oil.
- When thoroughly mixed, slowly add the oil, continuing to mix.
- Place on platter on bed of lettuce leaves and garnish with sliced black olives.
- Chill.
- Serves 10 to 12.
- Best made one day before serving.
