Triple Berry Cheesecake
- 1 cup cookie crumbs vanilla cream sandwich
- 1 tablespoon butter
- 10 ounces cream cheese @ room temp
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 tablespoons sour cream
- 1 cup berry preserves previously prepared
- Cook together 1 cup each of strawberries, raspberries & blueberries together with 1 tsp orange zest & sugar. Cook till the fruit is mushy (dont completely mash the fruits). Cook for another 10-15mins & turn off the heat. Dont let it thicken completely.
- Mix together cookie crumbs & butter. Press firmly to the bottom of the cake pan to form the crust.
- Beat together cream cheese, eggs, sugar & vanilla extract till creamy. Beat in sour cream.
- Pour half the creamcheese mixture over the crust. Spoon the berry preserves onto the creamcheese mixture. Top with the remaining cream cheese mixture.
- Bake in a preheated 300F oven for 1 hr.
- After 1 hr, remove from the oven & cool completely. Chill & top with berry preserves before serving.
