Sublime Praline Speculoos Biscuit Cake

  1. Preheat oven to 160 degrees Celsius.
  2. Melt the butter in a saucepan. Let cool.
  3. In a food processor, whisk the eggs and sugar for 10 minutes. Add the flour, and finally the cool melted butter. When the mixture is homogeneous, add hazelnut powder, vanilla powder, and mix.
  4. Add the speculoos spread, stir to incorporate in the dough.
  5. Pour 2 inches of the dough into a cake mold, add pieces of chocolate, lightly crushed speculoos biscuits, and cover with the remaining dough.
  6. Bake for 35 minutes.
  7. Cool on a rack.
