Seared Steak With Radish And Herb Salad
- 2 tablespoons olive oil
- 1 1/2 pounds steak
- 1 teaspoon mustard
- 1 teaspoon sugar
- 2 tablespoons vegetable stock
- 1/2 lemon juiced
- 4 scallions finely sliced
- 1 ounce radishes finely sliced
- 4 stems parsley chopped + some for garnish
- 1 bunch watercress
- 1 ounce alfalfa sprouts
- Heat oven to 300u0b0F. Heat 1 tbsp oil in a pan and sear the steak on both sides for 2 minutes over a high heat. Transfer to a roasting pan and place in the preheated oven for about 10 minutes.
- Meanwhile, mix the mustard, sugar, stock and lemon juice and whisk in 1 tbsp oil. Season with salt and pepper and set aside. Remove the steak from the oven and allow to cool for 10 minutes.
- Cut the steaks into thin slices and arrange on a serving platter. Mix the scallions, radishes, chopped parsley, watercress and sprouts and arrange in a pile in the center of the platter. Drizzle with the dressing and serve with a sprinkling of parsley and salt.
