Spicy Beef With Chickpeas And Feta
- 2 tablespoons olive oil
- 1 1/2 pounds ground beef
- 2 teaspoons ground cumin
- 1 onion peeled and diced
- 1 clove garlic peeled and diced
- 1 red pepper large, deseeded and cut into strips
- 1 green chili pepper deseeded and chopped
- 2 tablespoons tomato puree
- 14 ounces chickpeas drained and rinsed
- 8 ounces feta cheese
- 1/2 bunch parsley leaves chopped
- greek yogurt to serve
- pita bread to serve
- Heat the oil in a large frying pan, crumble in the ground beef and brown it for about 5 mins. Season with salt, pepper and cumin, then add the onion, garlic, pepper and chili pepper and cook for 5 more mins. Stir in the tomato puree and saute for 2 mins. Pour in 1 cup hot water and simmer 5 mins, then add the chickpeas and warm through. Check the seasonings.
- Serve sprinkled with feta and parsley, with yogurt and pita bread on the side.
