Warm Rhubarb Pie With Dried Apricots

  1. Preheat oven to 180 u0b0 C.
  2. Peel the rhubarb and cut them into small pieces.
  3. Place rhubarb into a baking dish. Add 140 grams of the brown sugar, the dried apricots and the cornflour.
  4. Bake for 30 minutes.
  5. To make the dough, whisk the softened butter and the remaining 160 grams of brown sugar. Add the egg, milk, flour and baking powder and stir.
  6. Pour the dough over the fruit. Do not spread it. Bake for about 45 minutes until the top is golden.
  7. Serve lukewarm with vanilla ice cream.
