Warm Rhubarb Pie With Dried Apricots
- 8 1/4 cups rhubarb
- 2 1/16 cups brown sugar
- 3 3/4 cups dried apricot
- 3 tablespoons cornflour
- 9/16 cup butter softened
- 1 eggs
- 1/2 cup whole milk
- 1 1/4 cups flour
- 1/2 teaspoon baking powder
- Preheat oven to 180 u0b0 C.
- Peel the rhubarb and cut them into small pieces.
- Place rhubarb into a baking dish. Add 140 grams of the brown sugar, the dried apricots and the cornflour.
- Bake for 30 minutes.
- To make the dough, whisk the softened butter and the remaining 160 grams of brown sugar. Add the egg, milk, flour and baking powder and stir.
- Pour the dough over the fruit. Do not spread it. Bake for about 45 minutes until the top is golden.
- Serve lukewarm with vanilla ice cream.
