Chinese Pepper Steak
- 1 lb. lean beef thinly sliced
- 1/2 c. dry red wine
- 2 Tbsp. peanut or vegetable oil
- 2 garlic clove crushed
- 1 small ginger slice or a pinch of ginger powder
- 2 large green pepper sliced
- 3 green onions chopped
- 1/2 c. fresh mushrooms sliced
- 1 6 oz. can water chestnuts sliced and drained
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- Marinate beef in wine for 30 minutes or longer.
- Heat wok or heavy skillet.
- Add oil and heat thoroughly.
- Stir fry garlic and ginger until light golden brown.
- Remove beef from marinade and stir fry for 4 minutes.
- Add vegetables and continue to stir fry 3 to 4 minutes.
- Dissolve cornstarch in soy sauce.
- Add soy sauce mixture and marinade.
- Stir fry stirring constantly another minute.
- Serve over rice. Serves 4.
