Pork Chops With Spring Vegetables And Orange-Mint Gremolata
- 1/2 tablespoon vegetable oil
- 4 pork chops
- 12 baby potatoes quartered
- 2 carrots peeled, thinly sliced on a bias
- 2 spring onions thinly sliced
- 3 cloves garlic minced
- 10 1/2 ounces fava beans frozen, thawed
- 2 tablespoons fresh flat leaf parsley chopped
- 2 tablespoons fresh mint chopped
- 2 teaspoons orange zest
- Preheat oven to 425u0b0F.
- Heat 1 tbsp oil in a large Dutch oven over high heat. Cook pork for 2 mins per side, or until browned. Set aside. Add potatoes, carrots, onions, 2 cloves garlic and remaining oil and toss to combine. Season. Roast for 15 mins. Add pork and roast for another 10 mins.
- Meanwhile, blanch fava beans for 2 mins. Peel. Add to pan and roast for another 5 mins, or until pork is cooked to your liking.
- Combine parsley, mint, orange zest and remaining garlic. Sprinkle over pork and vegetables. Serve.
