Huevos Rancheros With Chorizo
- 1 avocado
- 1/4 pound creme fraiche
- 2 tablespoons half & half
- 2 1/2 tablespoons lime juice
- 1 teaspoon honey
- 1 teaspoon sriracha sauce
- 1 clove garlic
- 1/4 cup cilantro
- 1/4 teaspoon cumin
- 4 cups all-purpose flour
- 3 tablespoons lard
- 1 tablespoon baking powder
- 1 1/2 cups water
- salt To taste
- 1. For the Chorizo: Season pork leg with chorizo spices and grind. Form pork into small patties and cook in a skillet
- 2. For the Avocado Crema: Combine all ingredients
- 3. For the Black Beans: Soak beans over night then cook with garlic, Spanish onion, paprika, cumin, chile powder, cilantro and pork stock until tender
- 4. For the Ranchero Sauce: Combine all ingredients
- 5. For the Flour Tortillas: Combine ingredients and knead until dense and dough holds together then roll with a pin. Place tortilla on a hot skillet and brush with rendered pork fat. Cook until bubbly and golden then flip
