Chipotle Chili Tilapia Salad
- 8 ounces tilapia
- 1 tablespoon lime juice
- 1/4 teaspoon chipotle powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 4 tablespoons light sour cream
- 1 tablespoon lime juice
- 1/2 avocado small
- 1/4 teaspoon chipotle peppers in adobo sauce finely chopped
- 1/2 cup red onion chopped
- 1/2 cup yellow bell pepper chopped
- 1/4 cup lime juice
- 1/2 cup black beans rinsed and drained
- 1 tablespoon jalepeno pepper diced
- 1/2 cup cilantro chopped
- 1 pinch salt
- 4 cups romaine lettuce chopped
- Preheat oven to 350.
- Cover cookie sheet with foil, and spray with olive oil cooking spray.
- Place tilapia on cookie sheet and sprinkle with 1 tablespoon lime juice, chipotle power, chili powder, and cumin.
- For sauce, combine sour cream, 1 tablespoon lime juice, chipotle peppers and avocado in a bowl and mash until smooth.
- For salsa combine red onion, yellow bell pepper, black beans, cilantro and 1/4 cup lime juice. Season with salt to taste.
- Top romaine with tilapia, salsa and sauce.
