Tuna Noodle Casseroles With Salad
- cooking oil spray
- 16 ounces lo mein noodles package fresh
- 16 ounces tuna drained, flaked
- 1 brown onion medium, finely chopped
- 14 ounces diced tomatoes
- 1 medium zucchini cut into 1/2 inch pieces
- 2 tablespoons flour
- 2 tablespoons capers drained
- 2 eggs lightly beaten
- 2 ounces cheddar cheese grated
- 6 ounces baby spinach and arugula salad greens
- 1 small carrot cut into matchsticks
- 1 tablespoon vegetable oil
- Preheat oven to 425u0b0F. Lightly spray 4 small, shallow ovenproof dishes with oil. Place dishes on a baking sheet. Soak noodles in boiling water in a medium heatproof bowl for 3 mins. Stir noodles to separate strands, then drain.
- For the casserole mixture, place noodles, tuna, onion, tomato, zucchini, flour, capers and egg in a large bowl and toss to combine. Spoon mixture into prepared dishes. Press down and smooth surface. Sprinkle with cheese, then bake 20 mins, until golden-brown and bubbling.
- For the salad, combine the greens and carrot in a bowl and toss with oil. Season and serve with the casseroles.
