Spinach And Bacon Pie

  1. Preheat oven to 200u0b0C (approximately 400u0b0F).
  2. Chop leeks.
  3. Heat olive oil in a pan and saute leek.
  4. Blanch spinach leaves in boiling, salted water for about 5 minutes.
  5. Press leaves down with a skimmer, so that spinach cooks evenly.
  6. Drain and immediately plunge spinach into cold water.
  7. Drain spinach well and press out excess water.
  8. Add finely diced bacon to pan with leeks.
  9. Saute for 3 minutes.
  10. Add spinach and cook briefly.
  11. Stir well and place filling in pie dish.
  12. Whisk eggs with the cream and milk.
  13. Season with salt, pepper, and nutmeg and pour over the filling.
  14. Bake in preheated oven for about 30 minutes.
  15. Let cool slightly before removing from pan.
